This voice came to Thomas Deliopoulos from a loving couple who were both deaf and mute; it just so happened that they were his parents. Because of their physical infirmity, they were able to form a very intimate link with the land and the cattle, which turned out to be a blessing rather than a curse for them.

Young Thomas, who was brought up in an agricultural family that was also involved in stock-breeding, recognised from an early age the gift of being in contact with mother nature and learned how to collect, with utmost respect, the best of the products it had to offer. His family was involved in agriculture and stock-breeding. Cooking became more than just a pastime for Young Thomas almost immediately after he started getting interested in the subject. Because of his upbringing, he is well aware of the significance of making careful selections of high-quality raw materials, and that genuine, delicious food may be achieved by adhering to a few basic principles… This typically trumps sophistication, which can obscure flavour rather than enhance it.

From humble beginnings.

He enlisted in the military when he was 17 years old and was given the job of a cook. He served for sixteen years in NATO officers’ clubs, domestically and abroad, with bases in Greece and other countries. Both brothers, Yani and Nic were born in Oakleigh, and some of their happiest childhood memories involve eating sweets that their grandmother had freshly cooked.

These childhood recollections served as the impetus for them to establish a business in the suburb where they had grown up that specialised in the creation of exquisite handmade doughnuts and the serving of speciality coffee.

What we do & why we do it.

The only way to communicate the voice of truth to another person is to have personally experienced it and to have allowed this truth to permeate every aspect of your life. This voice came to Thomas Deliopoulos from a loving couple who were both deaf and mute; it just so happened that they were his parents. Because of their physical infirmity, they were able to form a very intimate link with the land and the cattle, which turned out to be a blessing rather than a curse for them.

Young Thomas, who was brought up in an agricultural family that was also involved in stock-breeding, recognised from an early age the gift of being in contact with mother nature and learned how to collect, with utmost respect, the best of the products it had to offer. His family was involved in agriculture and stock-breeding. Cooking became more than just a pastime for Young Thomas almost immediately after he started getting interested in the subject. Because of his upbringing, he is well aware of the significance of making careful selections of high-quality raw materials, and that genuine, delicious food may be achieved by adhering to a few basic principles… This typically trumps sophistication, which can obscure flavour rather than enhance it.

From humble beginnings.

He enlisted in the military when he was 17 years old and was given the job of a cook. He served for sixteen years in NATO officers’ clubs, domestically and abroad, with bases in Greece and other countries. During this time, he also worked in the free market, collaborating with a variety of businesses, including restaurants and pubs. He eventually arrived at a point in his life when he got the feeling that he had completed this cycle and that it was about time for him to leave the army; it had never been a medium for him to express himself anyway.
